Oven Baked White Fish with Sweet Potatoes
Ingredients
2 Medium sweet potatoes,
2 tbsp of olive oil
Salt and pepper
Sprinkle of garlic salt or spices (if desired)
Alternatively you can use prepared Sweet Potato fries
175g of Daly’s Fearless White fish
Half a lemon
Chopped garlic clove
1 tbsp of parsley or a herb of your choice
15g of butter
Mixed vegetables or salad
Directions
- Preheat oven 180 degrees
- Chop Sweet potatoes length ways
- Mix the olive oil, salt and pepper, garlic salt in a bowl and then coat the sweet potatoes in the mix
- Place on a baking tray and bake for 20 minutes turning throughout
For the fish
- Place butter, parsley, garlic clove in a bowl and mix
- Coat the fish in the butter mix
- Place on a greased baking sheet
- Bake for 10 min until fully cooked
Lay your vegetables or salad on a plate, place the fish on top and serve with sweet potatoes.
