Back to School Lunch Ideas
We all know that we should be eating fish or seafood more than once a week. Even some experts are recommending 2-3 servings. It can be tough convincing the little ones on the family to eat more fresh fish especially when they have a fear of finding the small bones. At Daly’s Seafood’s we offer 99% bone free fish and we famously call it our ‘fearless fish’!! We even have a mascot.
So in celebration of getting our little ones back to school we have put together some delicious back to school lunch ideas with a healthy portion of fresh fish or seafood.
Keep it simple with a delicious Daly’s smoked salmon and cucumber sandwich on fresh soda bread.
Prawn cocktail sandwich
A real treat is a homemade mix of ketchup, mayonnaise and a squeeze of lemon. Add a handful of Daly’s prawns into the mixture and fill a subway roll with some crisp lettuce.
Award Wining BBQ Salmon & Crackers
Kids love crackers, add some of our delicious BBQ with the crackers as a tasty alternative.
If you child isn’t a sandwich lover or is bored of the same old thing why not try a pasta alternative?
Smoked salmon and pasta is an easy combination
75g pasta shapes
3 tbsp crème fraiche
½ clove garlic, crushed
40g Daly’s smoked salmon
Handful of chives
Cook the pasta in boiling water and drain.
Mix the crème fraiche, garlic and cooked pasta in a pan and cook on low heat for 1 minute. Turn off the heat and stir in the Daly’s smoked salmon, lemon juice and chives.
For the older kids
For the older kids there is also any salad combination with Daly’s smoked salmon, prawns or crab meat. Add some cooled potatoes to bulk up the meal and make it more filling.
